Olive is an angiosperm which belongs to the order Lamiales and family Oleaceae. The flowers are small, white and feathery. The fruit is a drupe .The flowers posses ten-cleft calyx and corolla , bifid stigma and two stamens.The olive tree is an evergreen tree.The leaves are oblong silvery green. The leaves are 5-10cm in width.The flowers are borne generally on the previous year's wood. These are born in racemes springing from the axils of the leaves. The fruit grows upto 2 cm in length. Olives are harvested in the purple stage in the autumn and winter. Most olives today are harvested by shaking the boughs. It has its Binomial name Olea europaea.Olives are very bitter when raw.
